Split Pea, Cabbage and Turkey Bacon Soup

One of my all time favorite soups is Split Pea Soup.    I have added a few things to my childhood recipe and from the pictures I posted on Facebook, I have had several requests for the recipe.

Split Pea, Cabbage and Turkey Bacon Soup

A simple, yet nutrient dense soup.

Ingredients
  1. 1 tablespoon coconut oil
  2. 1 large brown onion (finely chopped)
  3. 3 carrots, diced
  4. 3 celery ribs, diced
  5. 2 cups cabbage, diced
  6. 2 garlic cloves (crushed or minced)
  7. 1 lb dried split green peas (dried peas rinsed)
  8. 5 cups chicken stock & water
  9. 2 tablespoons lemon juice
  10. 1 small package nitrate free turkey bacon
  11. 1 tbsp thyme
  12. 1 tsp sea salt and black pepper
Instructions
  1. Heat oil in a saucepan over medium high heat and add onion, cabbage, carrots, celery and garlic and cook stirring for about 3 minutes till veggies are soft.
  2. Add peas and stir to coat.
  3. Add stock and bring to the boil.
  4. Reduce heat to low and simmer partially covered for 25 to 45 minutes or until peas are tender
  5. Remove from heat and process half the soup in a blender or use a stick blender untill smooth
  6. Return to pot or if you just used the stick blender, stir in lemon juice and cook for 3 minutes or until heated through.
  7. While soup was cooking in the first 25 minutes, heat a frying pan over medium high heat and add bacon and cook till crisp
  8. Transfer to a plate lined with paper towel and drain.
  9. Crumble into pieces and sprinkle on top of your bowl of soup.
Notes
  1. For a thicker soup, add in 1 small potato or 1 cup of white beans, canned.
