Holiday Almond Cookies

This recipe is great for the holiday season.  They are a little different from the bleached white flour recipes, but these taste great and they are so much healthier.  When baking with grain free flours the texture will be a little different as well.

This holiday season can have some sweetness and be tasty.

Holiday Almond Cookies

  • 1 T almond extract
  • 2 free range, organic eggs
  • 1 pinch sea salt
  • 1 T coconut oil
  • 1/2 t grated lemon peel
  • 1/2 t baking soda
  • 1/8 c stevia (more or less to taste)
  • 2 c finely ground almond powder (grind raw almonds in food processor until they resemble flour)

1.)  Preheat oven to 350 degrees and line cookie sheet with parchment paper to prevent sticking.

2.)  Mix together almond powder, almond extract, eggs (slightly beaten), sea salt, coconut oil, lemon zest, baking soda and stevia (you may need more or less stevia depending on your personal taste).

3.)  Shape dough into Tablespoon sized balls one inch apart on cookie sheet.

4.)  Bake until puffed and golden, about 12-20 minutes.  Cool cookies on baking sheet about 2 minutes before transferring to a rack or waxed paper to cool.

TIP:  Top dough balls with raw sliced almonds or raw pine nuts then bake for a decorative touch.  For another variation, drizzle baked and cooled cookies with melted unsweetened chocolate with stevia added to taste.
