GF Cabbage Noodle Beef Stroganoff

Being gluten free can be a challenge for some people.  I know for me it was way more difficult to be gluten free when I first started.  Now after several years, I’m always trying to find a loving upgrade to a meal that isn’t gluten free.

“A loving upgrade?” you ask?  Yes, a loving upgrade is taking a meal that has gluten in it and finding a healthier version to make instead.

Beef Stroganoff with noodles was a dish that I loved as a kid.  However, eating a dish like that with gluten and possibly canned soup mixes that may have MSG and other chemicals, I figured I would find a loving upgrade for my kids.

During the holiday season I received an Instant Pot for one of my gifts.  So of course I was gonna figure out how to do this recipe in the Instant Pot.  Don’t have an Instant Pot?  Don’t fear you can do this on the stove top or the slow cooker.  See below. It was simple, fast and delicious, that the whole family enjoyed.  I hope you will too.

GF - Cabbage Noodle Beef Stroganoff

A gluten free, dairy free delicious version of Beef Stroganoff.

  1. 2-3 tbsps coconut oil or bacon grease
  2. 1 piece of bacon, chopped
  3. 1 onion, diced
  4. 8 oz mushrooms, diced
  5. 1 tbsp dried parsley
  6. 1 small head of cabbage, sliced
  7. 2 lbs Beef stew meat, or sirloin roast, cut into 1" pieces
  8. 3 garlic cloves, minced
  9. 3 tbsp of tapioca flour
  10. 1 can full fat coconut milk
  11. 1 1/2 cups beef broth
  12. 2 tsp sea salt, divided
  13. 1 tsp black pepper
  14. 1/2 tsp dried thyme
  1. 2 big bunches spinach, put in at the very end and combine
For Instant Pot users, use these directions
  1. Turn IP on Saute and add 2 tbsp of oil (coconut oil or bacon grease) to the bottom of the pot.
  2. Add in the onions, bacon, sea salt. Saute for 3-4 minutes stirring often
  3. Add in the mushrooms and saute until soft.
  4. Remove the above from the pot and put into a bowl and set aside
  5. Season the beef with sea salt, black pepper, thyme, dried parsley.
  6. Add 1 tbsp of oil to the pot and add in the seasoned beef
  7. Brown the meat for about 2 minutes stirring a few times and then adding in the garlic
  8. Stir in the Tapioca Flour with the meat
  9. Return the onion and mushrooms to the pot
  10. Add in the sliced cabbage
  11. Pour in the beef broth
  12. Stir to combine the mixture.
  13. Cover the IP, close the pressure valve, and cook on high pressure for 12 minutes.
  14. After the 12 minutes on high pressure, quick release the pressure.
  15. Pour in the full fat coconut milk, stir to combine
  16. Remove from heat and add more sea salt or black pepper if desired
  17. Enjoy immediately
  1. Add in raw spinach at the very end.
  2. Cook this all in the slow cooker is also an option. Make sure to sear the meat and saute the onions and mushrooms before hand to create more flavor. I would slow cook for about 2.5-3 hours on low.
  3. This also could be cooked on the stovetop in a large skillet with sides or dutch oven. Again, saute the onions and mushrooms and sear the meat and then follow the rest of the instructions of adding in the other ingredients and cook until tender.
