A Twist On A Pizza Breakfast or Snack Muffin

I love pizza, just the smell gets me wanting it. Pizza however can really be a processed, fat laden, chemical s**t storm.  The good news is that it can be a healthy, nutritious snack or meal. 

I love having a quick little snack that is nutritious and satisfying.

DF, GF Pizza Breakfast or Snack Muffins
10 regular sized muffins


  • 6 pasture raised eggs
  • 1/3 cup balanced almond flour
  • 4 tbsp coconut oil, melted
  • 1/2 cup sausage or nitrate free pepperoni, diced
  • 1/2 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1-2 handful of spinach, chopped
  • 1/2 cherry tomatos, diced
  • 1/2 tsp sea salt
  • 1/4 tsp dried oregano
  • 1/4  tsp dried basil
  • 1/8 black pepper
  • If you eat dairy, add in organic, pasture raised cheddar, shredded** optional


  1. Preheat the oven to 375
  2. Whisk the eggs in a bowl then add the remaining ingredients and mix well.
  3. Grease muffin tins
  4. Pour the mixture into the muffin tins
  5. Bake for 10-15 minutes, until golden brown on the top
